I tossed a handful into my tempering oil with mustard seeds, and the kitchen filled with that unmistakable curry leaf aroma almost instantly. They’re nicely dried but still flexible enough to sauté without turning to dust.

The color still has that deep green freshness, and the leaves hold their shape well in the jar. Sautéing them with the onions for a minute really released that signature aroma, which is the whole point when you can't get fresh ones.

I was worried dried curry leaves would be flavorless, but sautéing these with onions brought out that authentic, aromatic taste I was missing. They stayed whole in the bag and worked perfectly for my dal recipe.
