芒果粉（Amchur）

The tartness really cuts through the richness of my butter chicken, and it's much more vibrant than the store-bought stuff I used to get. A little goes a long way in chutneys, too.

I've been using this in my curry base lately and the tartness really balances out the heat without being overpowering. The powder is finely ground so it dissolves easily into marinades, no clumping like some others I've tried. My chicken tikka came out with that authentic tang I've been chasing.
