The heat is mild enough that I can actually taste the rich, earthy flavor instead of just burning my mouth. I used two whole chiles in a pot of beans and the broth turned this gorgeous deep red, exactly what I wanted for a slow Sunday dinner.

The deep red color is exactly what you want for a rich bowl of posole, and the heat is gentle enough that my kids can eat it without reaching for water. I’ve already gone through a bag in two weeks, that’s how much we’ve used them.

Roasted a batch for red chile sauce last night, and the whole pods softened beautifully with that earthy, slightly sweet depth you expect from Hatch Valley. Heat is mild to moderate like the listing says, so it flavored without overpowering. Already ordered more.
