I finally tried this in a seafood paella and the grains puffed up beautifully without turning mushy. The texture alone made it worth the hunt for a proper bomba rice.

The grains stayed perfectly separate and tender after cooking, not a single mushy clump to be found. I can see why this rice's ability to absorb three times its volume makes such a difference in a proper paella. Definitely the best I've tried for that authentic texture.
