The secret to outstanding paella begins with the rice. Matiz Valenciano Premium Bomba Rice is grown in the fertile soils of Spain's protected L'Albufera park of Valencia. Bomba rice absorbs three times more liquid than traditional paella rice, so it will take on the beautiful flavors of your paella.

Bomba rice is a low-yield rice that requires more liquid and time to cook than Valencian rice. Named Bomba because of the considerable size it grows to when cooked. In paella theory, the more your rice tastes like each individual ingredient in the paella, the better. Bomba has a greater absorbency than Valencian and, therefore, is considered a superior rice.

Avery A. ★★★★★

I finally tried this in a seafood paella and the grains puffed up beautifully without turning mushy. The texture alone made it worth the hunt for a proper bomba rice.

Ruby B. ★★★★★

The grains stayed perfectly separate and tender after cooking, not a single mushy clump to be found. I can see why this rice's ability to absorb three times its volume makes such a difference in a proper paella. Definitely the best I've tried for that authentic texture.

Lily ★★★★★

I’ve used a lot of rice for seafood paellas, and this one soaked up the broth without turning mushy—the grains stayed distinct and creamy inside. The fact that it comes from Valencia’s protected wetlands gives me confidence it’s the real deal.
