Annatto, also known as Achiote and Roucou, lends a slightly nutty, sweet and peppery flavor to dishes. Annatto is the major component in Achiote paste, a Latin cooking staple. Annatto lends a distinctive yellow amber color to recipes. It's often referred to as "poor man's saffron" because its color is similar to the expensive threads. Penelope W. ★★★★★

I ground them fresh for a batch of cochinita pibil and the nutty, peppery kick came through perfectly, just like the description said. The color it gave the dish was a gorgeous deep orange, and the seeds have kept their potency sealed in the jar.

Michael A. ★★★★★

I ground some into my stew and got that subtle peppery warmth that made the dish taste authentic. The seeds are whole and fresh, with a deep color that really adds appeal.

David ★★★★★

The slightly nutty, sweet flavor was exactly what my cochinita pibil needed, and the seeds grind into a vibrant paste beautifully. It’s a much better result than the pre-made powder I used to buy.
